These are one of my favourites recipes from the first Oh She Glows cookbook series. If you don’t have the cookbooks I highly recommend purchasing them (or even one), you won’t regret it!
Now back to these circles of paradise. I have made these countless times and I never get sick of them, they fill you up and in my case give me hope for the morning to come. They are packed with antioxidants, omega-3 fatty acids, protein, and fiber. These are not your normal doughnuts however, they are dense and filling. The recipe calls for an optional Coconut-Lemon Whipped Cream, they are amazing with or without. I even add a spoonful of nut butter to get more protein.
This is a very simple and easy to follow recipe, with limited ingredients (all of which you probably have). To make this recipe a doughnut pan is needed, but as it says in the recipe a muffin tin will work. Though as everyone can attest to doughnuts are much more fun to eat!
