Who doesn’t love a good salad! This is my go to salad (especially when I forget groceries), all of the ingrediants are staples in my house.
Where do begin, the CHICKPEAS! I am the most avid chickpea lover in the entire world, I don’t remember a day where I haven’t had at least one meal with chickpeas. These chickpeas are roasted in my favourite mix EVER! Just fry them up on medium heat with some olive or avocodo oil, or vegan butter alternatives, and your good to go!
Chickpea Mix (adapted from Bon Appetit):
- 1/2 tsp of ground black pepper
- 1/2 tsp of ground coriander
- 1/2 tsp of ground cumin
- 1/2 tsp of smoked paprika
- 1/4 tsp of ground cinnamon
- 1/4 tsp of ground tumeric
- Pinch of cayenne pepper
Even not in a salad these chickpeas are a must! Having them as toppings for any salad, bowl, toast, or even just to snack these elevate any dish.
In this salad (other then the chickpeas) are just your basic veggies. Cucumbers, avo, arugula microgreens, spinach, and kale. As a dressing I drizzled a little bit of olive oil and spinkled a little salt on top.
